Honey & Lemon Cupcakes

Congratulations to Dawn Picken, the winner of our December 2020 Honey Recipe Competition with her recipe for Honey & Lemon Cupcakes!

 Honey & Lemon Cupcakes

Serves: 12 Cupcakes

Ingredients:

For the Cupcakes

  • 150g unsalted butter, softened

  • 100g caster sugar

  • 50g From The Beehive Runny Honey

  • Finely grated zest of one lemon

  • 2 large eggs, beaten

  • 150g self-raising flour

  • 3 tbsp lemon juice

  • ½ tsp salt

For the Buttercream

  • 100g salted butter, softened

  • 200g icing sugar

  • 1 tbsp From The Beehive Runny Honey

  • ¼ tsp Sicilian lemon extract (or to taste)

  • Yellow food colouring

For the Fondant Bees

  • Yellow fondant (approx. 2g per bee)

  • Black fondant

  • Black edible paint (Lustre dust + vodka)

  • Edible glue

  • White fondant

Method:

For the Cupcakes

  1. Heat oven to 150 Celsius (fan) / 170 Celsius.

  2. Cream together butter and sugar until light and fluffy.

  3. Add eggs very slowly while still mixing, once incorporated fully, add more until both eggs are added.  (If mixture shows signs of curdling, add a little flour).

  4. Once eggs fully incorporated, gently fold in flower.

  5. Fill 12 cupcake cases with batter to ¾ full.

  6. Bake for 25 minutes, or until golden brown and springs back when gently pressed.

  7. Leave to cool completely.

For the Buttercream

  1. Beat together icing sugar and butter until soft and fluffy.

  2. Add honey and lemon extract and beat until incorporated.

  3. Add yellow food colouring until you achieve the colour you are looking for.

For the Fondant Bees (per bee)

  1. Roll out yellow fondant into a teardrop shape and set aside to dry.

  2. Using the edible black paint, paint on thin stripes and let dry, alternatively, use strips of black fondant.

  3. Using the black fondant make the eyes and stinger and attach using the edible glue, or vodka if you don’t have any.

  4. Using a small petal cutter, cut out wings and leave to dry.

  5. To attach wings, make a small incision for the wings to fit into, then glue in place using edible glue, or vodka.
