Apple & Blackcurrant Honey Crumble Squares
Congratulations to Rose Hill, the winner of our August 2021 Honey Recipe Competition with her recipe for Apple & Blackcurrant Honey Crumble Squares!
Serves: 8 Squares
165g chilled unsalted butter, cut into pieces
250g self raising flour
125g ground almonds
80g soft brown sugar
45g demerara sugar (you will also need a small amount of demerara sugar to sprinkle on the cooked crumble when just out of the oven)
200g Bramley cooking apples, cooked
150g blackcurrants, uncooked
1 tablespoon From The Beehive Runny Honey (to combine with blackcurrants, when rinsed and dried)
2 teaspoons From The Beehive Runny Honey (for drizzling over finished crumble before going in the oven)
Heat oven to 180C/160C fan/gas 4. Line a 27 x 18cm baking tin with greaseproof/baking parchment.
Rub the chilled butter into the flour, almonds and both sugars to make crumbs, then firmly press two-thirds onto the base and sides of the tin.
Spread the cooked apple over the base of the crumble.
Spread honeyed blackcurrants over the apple.
Mix the flaked almonds into the remaining third of the crumble mix, then scatter over the fruit.
Evenly drizzle two teaspoons of From The Beehive runny honey over the crumble mix.
Bake in oven for 45-50 mins, or until golden and the fruit is beginning to bubble through the crumble mix.
Once out of the oven, sprinkle a little demerara sugar over the crumble top to give it a nice crunch.
Cool in the tin. Cut into eight squares. Can be served hot as a pudding with custard, cream, or ice cream, or cold with a lovely cuppa.
