
Honey Cake
Congratulations to Heather Hill, the winner of our September 2021 Honey Recipe Competition with her recipe for Honey Cake!

Serves: 1 Cake for Sharing
Ingredients:
225g unsalted butter
320g self raising flour
120g soft dark brown sugar
3 large eggs, beaten
3 tbsp From The Beehive Runny Honey (for glazing)
Method:
Preheat the oven to 140C (fan). Butter and line a 20cm round cake tin.
In a pan gently heat the butter, sugar and Honey together. Melt slowly over a low heat until all have combined into a liquid. Leave to cool for 30 minutes.
Beat the three eggs into the cooled liquid mixture.
Sift the flour into a bowl, pour in the liquid honey mixture and mix till you have a smooth batter.
Pour the mixture into your lined cake tin and cook for 1 hour or until the cake has risen to your satisfaction. Poke a skewer into the cake - the skewer should come out clean when the cake has finished cooking.
Turn the cake out onto a wire rack and brush the extra honey onto the cake while still warm to give a lovely glaze.
Leave to cool, eat and enjoy!
